To cook "my" pasta alla carbonara I have read many recipes, all with slight variations, with the bacon or pancetta, pecorino or Parmesan cheese, in the end I used bacon and Parmesan.
I have excluded the pillow being too fat and the cheese because it is too tasty to the palate of my guests.
Ingredients ( for four ) :
· 320 gr di penne rigate
· 3 uova
· 150 gr di pancetta affumicata
· 2 cucchiai di parmigiano
· sale
· pepe
· oil
Preparation:
Cook the pasta in salt water, I used penne because the more I love the pasta, but spaghetti will be perfect.
Meanwhile diced bacon and let it sauté for a few minutes.
Beat the three eggs in a dish, add the Parmesan cheese. pepper, a pinch of salt and stir.
Drain the pasta and pour into the pan of bacon at this point add the eggs and mix, keep the flame very low, just to mix your own "pasta alla carbonara" without making it dry the egg.
Serve hot, if you like to complete with another sprinkling of Parmesan cheese.
